Beef Korma Haven

I made it in Crock pot and it was delicious...
Beef Korma

2 tbsp Oil (and 1 tbsp butter to brown meat) 
1 tbsp fresh chopped garlic
1 tbsp fresh ginger

1 finely Chopped onions

4 tbsp yogurt (I added 6)
2 tsp fresh corriander 
1 green chili chopped
1 tsp garam masala
1 tsp salt (to taste)
1/2 tsp chili powder
1/2 tsp black pepper
1/4 tsp turmeric
1 tbsp tomato paste
2 whole tomatoes (from can or fresh with skin removed by quick blanching in hot water) 


1. First I started with a pot and butter, heat the butter and add a drop of oil and once it's hot adding all the stewing beef to brown on all sides. Don't be afraid just let it brown until you see brown bits on the bottom of the pan.
2. Remove the beef onto a plate.
3. Add some more oil if necessary to the pot and then onions and sautee until they look clear on medium (keep an eye on it, I burnt the first batch!)
4. Next to go in is the spices and they toast for a few seconds, then the fresh garlic and ginger (lots of!)
5. Meat gets added back in and finally the yogurt gets fried in the pot a bit until things look a little brown.
6. Add the chopped tomato and some liquid to cook. Simmer and let cook until meat is tender. 

I cooked it for 1h on high setting then reduced to "slow cook". I did use more coriander and ginger then in original recipe.

Francesinha - mother of all sandwiches


Francesinha (meaning Little Frenchie or simply Frenchie in Portuguese) is aPortuguese sandwich originally from Porto, made with bread, wet-cured ham,linguiça, fresh sausage like chipolata, steak or roast meat and covered with molten cheese and a hot thick tomato and beer sauce served with french fries.
In portuguese "Francesinha" means little french girl. It's said this is an invention of a returned emigrant from France. It is a great sandwich and its sauce is a big secret! Nobody really knows the true sauce!

One Serving

The sauce recipe yields enough for 25 sandwiches. Make the sauce and freeze it in smaller quantities.

To Make the Sauce Ahead

  • 3 large onions, coarsely chopped
  • 1/2 cup olive oil
  • 1 cup water
  • 2 bay leaves
  • 1 pound ham, mortadella or salami, cut in pieces
  • 7 tablespoons flour
  • 1 beer
  • 3 ounces whisky,or brandy
  • 1 tablespoon tomato paste
  • Piri piri hot sauce or tabasco like sauce
  • salt and ground pepper to taste
  • 1 poached or scrambed egg (optional)
  1. Fry the onions in the olive oil until translucent. Add the water, bay leaves and meats. Sauté the beef, sausage and ham for about 2 minutes each side.
  2. When the meats are done, transfer to a dish and remove the bay leaves from the pan. Puree the remaining contents of the pan. Return the pan to the heat
  3. Using the beer,dissolve the flour and tomato paste into a cup, followed by the whisky or brandy, salt, hot sauce. Mix thoroughly, add to the pan and bring to a simmer.
  4. Place 1 slice of bread on a plate or small bowl. Top it with the beef slices, sausage,sliced lengthwise followed with a scrambled egg if using. Add the top slice of bread followed by placing the slices of cheese on top and on the sides. If you prefer a poached egg, add it on top of the last slice of bread.
  5. Spoon the very hot sauce over the top and sides of the sandwich, melting the cheese. Serve immediately. You will need a fork and knife.

For one sandwich serving:

  • 2 slices of sandwich bread
  • 2 ounces sandwich steak, thinly sliced
  • 2 ounces linguica or chourico sausage
  • 4 thin slices of cheese (Sao Jorge or other soft cheese)
  • 1 scrambled egg(optional)

Sancocho De Pollo - Colombian Chicken Soup



Delicious, heart worming, wonderful aromatic chicken soup from Columbia. Sancocho is a hearty soup, almost like a stew and is a traditional dish in the region of Antioquia, Colombia that combines potatoes, yucca, corn, plantains and meat.This is eaten for lunch "el almuerzo" in Colombia, which is the main meal there. It is typically served with rice and avocado on the side.



6 skinless chicken parts, (I like thighs)
  • 1 tbsp oil
  • 5 scallions, chopped
  • 1 tomato, chopped
  • 4 cloves garlic, chopped
  • 1/2 onion, chopped
  • 1 cup chopped cilantro
  • 3 medium potatoes, peeled and chopped into 2 inch pieces
  • 3 pieces of yucca (about 2 cups)
  • 3 ears corn, cut in half
  • 1 small green plantain, peeled and chopped into 1" pieces
  • 1 tsp cumin
  • 2 chicken bullion cubes
  • salt to taste
In a large pot, saute scallions, onions and garlic in oil. Add tomatoes and sauteanother minute. Add chicken pieces and season with a little salt. Saute a few minutes, then add yucca and plantain and fill pot with water. Add chicken bullion, cumin and half of the cilantro and cover pot. Simmer on low for about 40 minutes. After 4o minutes, adjust salt and add potatoes, cook and additional 15 minutes. Add corn and cook an additional 7 minutes or until corn is cooked. Serve in large bowls, and top with cilantro.
